Marinated Tomato Tofu Salad
6 oz firm tofu 1 tbs fresh basil, chopped
3 tomatoes, chopped 1/2 c balsamic vinegar
1 bunch green onions, chopped fine 2 tbs honey
1 red onion, diced 1 tsp fresh cilantro, chopped
1 tbs garlic, minced 1/2 tsp ground cumin
Salt and black pepper, to taste
- Drain tofu; press between several layers of paper towels to remove
excess moisture. Cut into small pieces and place in a medium bowl.
- Add remaining ingredients and let marinate overnight. Serve on a bed
of field greens.
- Makes 4 servings.
