Super Easy, Super Good Recipe
Spring Salad
2 cups fresh baby spinach
1/2 cup fresh strawberries, sliced
1 orange, peeled and sliced (or 1 cup mandarin oranges, packed in juice)
1/4 cup sliced almonds
4 tablespoons low-fat red wine vinaigrette or red raspberry dressing
1. Combine spinach, fruit and nuts in a medium bowl.
2. Toss with dressing just before serving.
3. Makes 2 servings
